breakfast for dinner



i'm a big fan of breakfast food, and always enjoy a new recipe. The Tribune is on the lookout for some recipes that will be shared in the Sunday Lifestyles section - so click over and submit your favorite on facebook or you can click here to email your recipe to them!

my monday breakfast/dinner casserole:

Cheesy Sausage and egg casserole
6 Eggs, beaten
1 small pkg sausage, browned and drained
1 pkg crescent rolls
2 cups shredded cheese (cheddar or velveeta)
1 onion, chopped (optional)

Directions: Brown sausage and onion and drain. Spray an 8'' x 11" pan with cooking spray or Pam. Unfold and lay crescent rolls in bottom of dish. Spread cooked sausage evenly over crescent rolls. Mix eggs together and pour into dish over sausage. Spread cheese over the top of the casserole and bake for 30-35 minutes at 350 degrees, or until golden brown on top.

i actually used a white mexican shredded cheese on mine, and it turned out great!
